One of my favorite breakfast combos is bacon, eggs, and sourdough toast. When I was waitressing years ago at our local Denny’s this was always my go-to meal during my 30-minute break. I don’t know what it is about sourdough bread with salty bacon and soft eggs, but it never disappoints.

I only made a couple small changes to the original recipe because I can’t help myself when I’m cooking, but overall, this is a fantastic and wonderful breakfast casserole. The sharp sourdough, the crispy bacon, the fluffy eggs, and salty parmesan cheese. It’s basically a deconstructed breakfast sandwich in my opinion. I think the hardest part about this recipe, and it really isn’t hard at all, is cooking down the bacon and onions. Other than that, it’s so easy to just layer the ingredients in the pan and wait until the magic happens before baking.

What is a breakfast strata?

A breakfast strata is basically a layered casserole with bread, eggs, cheese, and usually meat or veggies. Depending on how much egg and milk are used, this could either feel more like bread pudding, or a frittata with bread.

Is this Breakfast Strata Soggy?

The short answer is no. If you’re like me, I don’t like the super custardy, pudding-like breakfast casseroles. A little moistness is good, but I like the bread to feel like bread and have a nice crunch on top. This recipe is perfectly balanced with just the right amount softness and crispy top. No soggy bread here, and the egg mixture settles more on the bottom like a quiche or frittata.



Ingredients For Breakfast Strata:

  • Bacon
  • Onion
  • Rustic bread (like sourdough)
  • Milk
  • Eggs
  • Seasoning salt
  • Black pepper
  • Ground mustard
  • Fresh spinach
  • Parmesan cheese
  • Non-stick cooking spray
  • Fresh parsley

Substitutions and variations:

  • Meat- Any kind of breakfast meat would work well in this recipe. Swap out the bacon for ham, or breakfast sausage, or use a combination of the 3.
  • Bread– As I mentioned above I love sourdough but any kind of dense rustic bread would work. Make sure it’s day old bread as it will hold up better with the egg mixture.
  • Seasonings– Add other seasonings like garlic powder, Italian seasoning, cayenne pepper for heat, or onion powder. This is a forgiving recipe so use what you love.
  • Fresh garlic– I don’t love a lot of garlicky flavors for breakfast but by all means, if you do, freshly minced garlic sautéed with the bacon and onions will be sure to add great flavor.
  • Cheese– Other cheese options for breakfast strata are shredded sharp cheddar, pepper Jack, Colby Jack, mozzarella, and even feta cheese would be delicious.


Step by Step How To Make Breakfast Strata:

Step 1. Cut the bacon into small pieces and cook in a pan until almost crisp. Add onion and sauté until softened and bacon is crispy. Transfer to a plate lined with paper towels to help soak up some of the grease and set aside.

Step 2. In a medium size bowl whisk milk, eggs and seasonings until smooth.

Step 3. Spray a 9×13 inch baking dish with non-stick cooking spray. Add bread cubes, then top evenly with bacon and onions, chopped spinach, and parmesan cheese. Pour egg mixture over the top of the bread, doing your best to coat each piece. Cover with foil and place in the refrigerator for at least 1-hour or overnight.

Step 4. Preheat oven to 375℉. Remove the pan from the refrigerator and let sit at room temperature for 30-minutes before baking. When ready to bake, place in the oven uncovered and bake for 20-minutes. Loosely lay the foil back over the pan and bake an additional 30-minutes. It should be puffed, golden, and the center set. Sprinkle with fresh parsley and allow to sit for 5-minutes before slicing.

Make ahead of time or same day.

The great thing about this recipe is you can make it the same day or the traditional overnight method. The bread needs to sit with the egg mixture at least 1-hour but 8-hours is best. Either way, it will still be wonderful!

What To Serve With Breakfast Strata:

This really needs nothing more than a bowl of fresh fruit, but a side of fried potatoes would be a nice addition.

  • 1 cup grated parmesan cheese

  • 1/4 cup chopped fresh parsley
