Maybe you’d could call it my guilty pleasure, but one of my favorite things to make myself when my family is away for the evening is a big bowl of ramen and veggies. I love ramen because it feels like I’m eating pasta only the noodles are much lighter. I also appreciate that it only takes a few minutes to cook, so it’s perfect when I get a craving for noodles but don’t have the patience to wait long.
Ground Beef and Broccoli Ramen is like a super amped-up ramen experience. A much better option than take-out, in my opinion. This recipe has awesome Asian flavors like soy sauce, sesame oil, and ginger. All pantry staple ingredients you might even have on hand! We bulk it up with ground beef and veggies for a complete and healthy meal.
Ingredients:
- Olive oil
- Lean ground beef
- Yellow onion
- Garlic cloves
- Fresh broccoli florets
- Red bell pepper
- Shredded carrots
- Beef ramen noodles (such as Maruchan)
- Toasted sesame seeds (optional)
For The Sauce:
- Beef broth
- Low sodium soy sauce
- Brown sugar
- Honey
- Ground ginger
- Toasted sesame oil
- Corn starch
- Red pepper flakes
Other Ground Meat Options:
If you don’t want to use ground beef in this recipe you can swap it out for ground turkey or pork.
More Veggies:
This is a great recipe to use some of your favorite veggies. Asparagus, fresh green beans, snap peas, and mushrooms would be a nice addition.
How To Make Ground Beef and Broccoli Ramen:
Step 1. Heat a large non-stick skillet to medium heat. Add olive oil and broccoli florets. Cook florets until just tender. Transfer to a plate. Meanwhile combine sauce ingredients in a medium bowl and set aside.
Step 2. To the same skillet cook ground beef until no longer pink. Add onions, garlic, carrots, and bell peppers. Sauté for 2-3 minutes. Peppers should still be crisp tender.
Step 3. Add the broccoli back to the pan with the cooked beef and veggies and pour in the sauce. Bring to a low simmer and cook 5-minutes until sauce is thickened.
Step 4. Prepare ramen noodles in a small sauce pan following the package directions, only undercook by 1-minute. Immediately transfer just the noodles to the pan with the beef and broccoli. Toss to combine with the sauce and serve with toasted sesame seeds.
Additional toppings:
This recipe is delicious as is but if you want to add even more flavor and fun, try topping with any of the following ingredients.
- Fresh cilantro
- Squeeze of lime juice
- Peanuts or cashews
- Siracha hot sauce

- 1 tbsp olive oil
- 4 cups broccoli florets
- 1 pound lean ground beef see recipe notes for other options
- 1/2 cup chopped yellow onion
- 1-2 minced garlic cloves
- 1/2 cup shredded carrots
- 1 red bell pepper cut in thin slices
- 2 packages of beef top ramen such as Maruchan or Nissin
- toasted sesame seeds optional
Sauce:
- 1 1/2 cups beef broth I use better than bouillon roasted beef base for great flavor
- 1/4 cup low sodium soy sauce
- 3 tbsp light brown sugar
- 2 tbsp honey
- 1 tsp toasted sesame oil
- 1/2 tsp ground ginger
- 3 tbsp corn starch
- pinch of red pepper flakes
Instructions
- Heat a large non-stick skillet to medium heat. Add olive oil and broccoli florets. Cook florets until just tender, about 8 minutes. They should still be slightly crisp. Transfer broccoli to a plate.
- While the broccoli cooks, whisk sauce ingredients in a medium bowl until combined. Set aside.
- To the same skillet cook ground beef until no longer pink. Remove any excess grease. Add onions, garlic, carrots, and bell peppers. Sauté for 2-3 minutes. Peppers should still be crisp tender.
- Add the broccoli back to the pan with the cooked beef and veggies and pour in the sauce. Bring to a low simmer and cook 5-minutes until sauce is thickened. Stirring occasionally.
- Prepare ramen noodles in a small sauce pan following the package directions, only undercook by 1-minute. Immediately transfer just the noodles (no cooking liquid) to the pan with the beef and broccoli. Toss to combine with the sauce and serve with toasted sesame seeds if desired.
