Hungry Jack Casserole was a staple in my home when I was growing up. Actually we ate a lot of casseroles during my childhood days. It was the easiest kind of meal for my mom to feed our large family. When Hungry Jack was on the menu you could bet that everyone made it to the dinner table on time. It was basically the ultimate comfort food that always satisfied the hunger pangs. My favorite part was the buttery biscuits that absorbed the delicious BBQ flavors. I could eat a big plate of it right now!
What exactly is Hungry Jack Casserole?
Well.. it’s one of the best down home country meals you’ll ever eat! It starts with a simple filling of ground beef, baked beans, BBQ sauce, and brown sugar. All this goodness is topped with Grands original biscuits and baked until golden and puffed. We top the biscuits with cheddar cheese and let it melt until gooey.
Where Did Hungry Jack Casserole Come From?
I have searched high and low to find where this casserole first originated from and I give up. Was it from a hungry lumber Jack? A famished farmer named Jack? Since I truly don’t know it remains my moms recipe in which I give her full credit.

- Olive oil
- Yellow onion
- Lean ground beef
- Salt and pepper
- Baked beans
- BBQ sauce or ketchup
- Brown sugar
- Grands southern homestyle biscuits
- Cheddar cheese
- Fresh parsley

The ingredients list is short and sweet and it’s easy to use your favorite items. If you prefer ground turkey or another ground meat mixture, feel free! We love Bushes baked beans because their ingredients list is fairly simple and not complicated but any brand will work just fine. And if you want to amp up the veggies in this recipe, dice up some carrots or bell peppers and sauté them with the ground meat. Lots of options to customize with your favorite brands and ingredients.
How To Make Hungry Jack Casserole:
Step 1. Heat oven to 350℉. Brown ground beef and onion with olive oil in a large skillet until beef is no longer pink. Remove excess grease.
Step 2. Stir in salt and pepper, baked beans, BBQ sauce, and brown sugar. Bring to a low simmer. While meat and beans are simmering cut each biscuit in half.
Step 3. Pour the meat mixture in a casserole dish and top with halved biscuits making sure the round side is facing up. Bake for 30-35 minutes or until biscuits are golden brown and puffed. Top with cheese and bake another 2-3 minutes just until cheese is melted. Garnish with fresh parsley to make it look pretty.

Hungry Jack Casserole
Ingredients
- 1 tbsp olive oil
- 1 lb lean ground beef
- 1/2 medium yellow onion, diced
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 (16) oz can baked beans I use an additional 1/2 can
- 3/4 cup BBQ sauce or ketchup
- 2 tbsp brown sugar
- 1 pkg Pillsbury grands southern homestyle biscuits, cut in half
- 1 cup shredded cheddar cheese
- non-stick cooking spray
- fresh chopped parsley for garnish
Instructions
Heat oven to 350℉
- Brown ground beef and onions with olive oil in a large skillet until beef is no longer pink. Remove any excess grease.
- To the cooked beef add salt and pepper, beans, BBQ sauce, and brown sugar. Stir to combine and bring to a low simmer and cook for 5-minutes.
- Transfer meat and beans to a 2 qt baking dish sprayed with non-stick cooking spray. Smooth out in a single layer. Top with halved biscuits making sure the round side is facing up.
- Bake for 30-35 minutes until biscuits are golden brown and puffed. Top with cheese and bake another 5-minutes just until cheese is melted. Garnish with fresh parsley.
