When it comes to hosting or going to a party, appetizers like crack corn dip is my kind of recipe to make and share. A simple, no fuss, crowd pleasing snack you know will get eaten and enjoyed by everyone.

Slow Cooker Crack Corn Dip is a nice change from the classic snacks you might see at a party, like bean dip, or French onion dip. Although great recipes, crack corn dip is unexpected and it’s fun to see everyone get excited about something new on the table.

No Mayo Corn Dip:

Unlike most corn dip recipes that call for mayo, this has a blend of cream cheese and sour cream. My daughter does not like mayo and can detect it in just about anything, so I was thrilled to have a recipe she could enjoy without turning her nose up.



Ingredients:

  • Frozen or canned corn
  • Taco seasoning
  • Ranch mix
  • Fresh jalapenos
  • Mexican cheese blend
  • Sour cream
  • Cream cheese
  • Cilantro
  • Queso fresco cheese (optional)
  • Lime
  • Tortilla chips and veggies

Is Crack Corn Dip Spicy?

While this dip does have fresh jalapenos it is not spicy. I remove both the seeds and membranes making this a mild dip. For a spicier kick add chopped jalapeno seeds and all. You can also add pepper Jack cheese or cayenne pepper for some heat.

How To Make Slow Cooker Crack Corn Dip:

  • To a slow cooker combine corn, taco seasoning, and ranch mix. Add jalapenos, Mexican cheese, sour cream, and cream cheese. Cover and cook on low for 2-hours stirring once in between.
  • Keep dip in the slow cooker on warm or transfer to a serving bowl. Top with fresh lime juice, cilantro, and crumbled queso cheese.

Favorite Things To Serve With Corn Dip:

I love to serve this corn dip with halved mini peppers along with tortilla or corn chips. The peppers act as the perfect scoop for the dip and it’s a fresh crunchy addition. You could also add other veggies like celery and carrots sticks. Corn dip also makes a great topping for tacos, nachos, or even a side dish to any Mexican cuisine.



What if I don’t have a slow cooker?

You can absolutely bake this in the oven. You’ll want to combine the softened cream cheese with the sour cream and then stir in the rest of the ingredients. Bake covered at 350 for 20-25 minutes or until hot and bubbly. Add toppings and serve!

Make ahead:

This dip could absolutely be made ahead of time but honestly it’s so easy to throw together on the fly that it really wouldn’t save much time. However, maybe your circumstances require a little prep ahead. Here’s some details for you.

Slow cooker method– Combine all the ingredients that cook in the slow cooker in a bowl and cover tightly with foil or seal with a lid. NOTE: Cream cheese does not need to be fully incorporated or softened for this method. It will melt as it cooks in the slow cooker. Place in the refrigerator up to two days in advance. When ready to cook, dump everything except the toppings in your slow cooker and follow the cooking times in the recipe notes.

Baking method– Combine all the ingredients minus the toppings in an oven safe dish and cover tightly with foil or seal with a lid. Place in the refrigerator up to two days in advance. When ready to bake, set out at room temperature for 30-minutes then bake in a preheated oven for 25-30 minutes or until hot and bubbly.

Ingredients

  • 3 cups frozen or canned corn
  • 1 tbsp taco seasoning
  • 1 tbsp ranch seasoning mix
  • 2 jalapenos, seeded and diced small see notes for a spicy option
  • 1 cup shredded Mexican cheese blend
  • 3/4 cup sour cream
  • 1 (8) ounce block cream cheese, cut in small cubes

Toppings:

  • fresh lime juice
  • fresh cilantro
  • crumbled queso fresco
