This is another great recipe from my mom’s special cookbook she gifted me. Sunday Chicken (also known as corn chip casserole) was a recipe my mom made A LOT when I was growing up because it was so easy to throw together and the family loved it. It was also a dish you would almost always find on the church potluck table right next to Violet Northworthy’s Jell-O fruit salad. 🙂
Sunday Chicken is creamy and cheesy, loaded with lots of white meat chicken, and each bite has the perfect salty crunchy corn chip flavor. It’s basically a dump-and-bake kind of meal. Serve with a simple side salad or steamed veggies and you have a complete dinner the family will always make time to eat.
Ingredients:
- Cooked chicken
- Yellow onion
- Cream of chicken or mushroom soup
- Cheddar cheese
- Corn chips (such as Fritos)
- Green onion (optional)
Sunday Chicken is perfect for using up leftover chicken, a rotisserie chicken from the grocery store, or even crock pot chicken, which is what I use. This short-cut makes this meal super fast to whip up. And if you want to make your own cream of chicken or mushroom soup here is a great resource for a homemade version. The most important ingredient in Sunday chicken is the corn chips. This is what gives it such great flavor so it’s worth a trip to the grocery store if you don’t have them.
How To Make Sunday Chicken:
Step 1. Heat oven to 350℉ and spray a casserole dish with non-stick cooking spray. Crush corn chips and set aside.
Step 2. This step is optional. In a small skillet sauté onions with a little butter or olive oil until golden brown.
Step 3. Combine cream of soup with chicken, part of the cheese, and onions in a large bowl.
Step 4. In prepared casserole dish spread half of the corn chips in an even layer, then spread the top with the chicken mixture. Layer with the rest of the corn chips and cheese. Bake for 35-40 minutes or until bubbly and golden brown.
Meal train supper:
This is a great recipe for a meal train supper or just sharing with someone in need. Assemble all the ingredients and the only thing your recipient has to do is bake it. Write out instructions for baking temperatures and times and your meal will be much appreciated and enjoyed!
Make Ahead:
Make Sunday Chicken 1 day in advance. Assemble casserole in your prepared baking dish leaving the corn chip topping aside until just before baking. When ready to bake top with chips and follow the recipes baking time and temperature.

Sunday Chicken
Ingredients
- 1 small yellow onion, diced
- 1 tbsp butter
- 4 cups cooked chicken, cubed or shredded
- 2 cans cream of chicken or mushroom soup
- 1 1/2 cups shredded cheddar cheese, divided
- 1 (10) oz bag corn chips, crushed such as Fritos
- 1/4 cup sliced green onions optional for garnish
Instructions
Heat oven to 350℉ and butter or spray a 9×13 inch baking dish with non-stick cooking spray.
- This step is optional but I think it makes it even better. Heat a small skillet to medium heat and add butter and onions. Sauté until golden brown.
- To a large bowl add cooked chicken, onions, cream of chicken soup, and 1 cup of cheese. Stir to combine.
- In prepared baking dish add 1/2 of the corn chips and spread out in a single layer. Next add the chicken mixture and create another layer. Finally end with remaining corn chips and cheese. Bake uncovered for 35-45 minutes or until hot and bubbly and the corn chips are browned. Top with green onions if desired.
