At the end of each week I start thinking about meals I want to prepare for the following week ahead. I typically have 1 or 2 evenings with little to no time to make dinner. Slow-Cooker meals are easy and require little effort so they’re perfect for days like this.

If you’ve ever been to a Trader Joe’s you know how great their products are. I happened upon this Mango Pineapple and Red Jalapeno Salsa (affiliate link) and fell in love with the flavors! I snagged a couple more jars and decided to create an easy slow-cooker meal.

Island Slow Cooker Chicken takes under 5 minutes to put together and only 3-ingredients. My family was so impressed by the flavor and loved every bite, we had it again two weeks later!



4-Ways To Serve Island Slow Cooker Chicken:

  1. Over rice– any kind of rice, quinoa, or couscous is great.
  2. Tacos- shred chicken and use in soft or crunchy tacos (this is my favorite).
  3. Quesadillas– shred chicken and add cheese and rice between 2 tortillas (this is my daughters favorite).
  4. Over potatoes– mashed potatoes, sweet or russet, both are delicious.

Will Any Salsa Work?

If you’re keeping with the “island” theme, any sweet salsa with mangos and/or pineapple will work just fine. You can also use any kind of savory tomato base salsa. Whichever you choose, be sure to buy the mild or medium heat as it becomes spicier as it cooks.

Use White Or Dark Meat Chicken.

I love using boneless skinless chicken thighs in general because they have more flavor. If you prefer chicken breasts, use those instead or a combination of both!

Equipment

  • 1 6 Qt Slow Cooker

Ingredients
  

  • 1 1/2 lb boneless skinless chicken thighs and/or breasts I use about 5-6 medium chicken thighs
  • 12 oz jar mango pineapple salsa I use island salsa from Trader Joe's
  • 1/4 tsp garlic powder
  • 1/4 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp water

Instructions
 

  • Add half of the salsa to the bottom of the slow cooker and spread evenly. Mix spices together in a small dish. Place chicken on top of salsa and sprinkle with seasoning. Add the remaining salsa on top of chicken and add 2 tablespoons of water.
  • Cover and cook on high for 5 hours or on low for 7-8.
